Spanish Puff Pastry Pinwheels are an easy and delicious appetizer, filled with lots of spanish chorizo and manchego cheese.

Ingredients
- 1 sheet puff pastry half of a 17.3oz box, thawed
- 1/4 cup Spanish chorizo finely diced
- 1/4 cup grated Manchego cheese
- salt & pepper to taste
- 1/4 teaspoon dried parsley
Instructions
- Preheat oven to 400 degrees. Line baking sheet with parchment paper or silicone baking mat and set aside. Unfold cold, but defrosted puff pastry and place onto floured work surface. Gently roll with rolling pin to ensure dough seams are together.
- Sprinkle with chorizo, cheese, salt {don't use a ton!}, pepper and parsley flakes. Roll up as tight as possible and cut into twenty thin pinwheel slices. A serrated bread knife worked great for me!
- Place pinwheels onto prepared baking sheet and bake for 12-15 minutes or until golden and cheese has melted and is crispy. Cool slightly and serve immediately. These taste best fresh!
