Chow Mein

Chow Mein here is prepared with fresh noodles, cabbage, carrots, and onion stir-fried in vegetable and sesame oils. The vegetables are cooked until just tender, then combined with noodles tossed in soy sauce and brown sugar for a balanced savory-sweet flavor. The method involves boiling noodles briefly before stir-frying to maintain their texture. This yields a lightly sauced, flavorful noodle dish common in Chinese cuisine.

Notes

  • Boil fresh ramen noodles only for 2 minutes to prevent overcooking before stir-frying.
  • Cover vegetables while stir-frying for 1–2 minutes to soften them without losing texture.
  • Rinse boiled noodles with cold water to stop cooking and prevent sticking.
  • Adjust soy sauce quantity at the end to taste for proper seasoning balance.
