Chow Mein
Description
This Chow Mein recipe starts by slicing onion and carrot into strips and cutting cabbage into bite-sized pieces. Fresh homemade noodles are boiled briefly for 2 minutes, then rinsed with cold water to stop cooking and prevent sticking. The vegetables are stir-fried in vegetable oil over medium-high heat until slightly softened, covered briefly to speed cooking while retaining crispness. After vegetables reach desired tenderness, the cooked noodles are added back to the wok along with sesame oil, soy sauce, and brown sugar, stirred to coat everything evenly with a light sweet and savory glaze.
The result is a stir-fried noodle dish where the noodles maintain a tender yet firm texture, complemented by the slight crunch of the vegetables. The combination of sesame oil and soy sauce gives the dish its characteristic flavor, with brown sugar balancing the saltiness. This dish can be a standalone meal or served as part of a larger Chinese-inspired dinner.
Covering the vegetables while stir-frying helps them cook through without over-softening. Avoid over-boiling noodles initially to prevent mushiness after stir-frying. Adjust soy sauce quantity to taste when finishing the dish.
