Christmas Funfetti Bread

It’s in the name: sprinkles, larger than life rich vanilla flavor, moist and brightened with light glaze icing and did I mention sprinkles. You may have come across a funfetti cake, but this Christmas bread I think is the best version yet.

Ingredients

  • ¾ cup butter softened
  • 1 ½ cup all purpose flour sifted
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon vanilla
  • ½ cup milk
  • ½ cup sour cream
  • ½ cup Sprinkles Christmas mix
Icing
  • 1 ¼ cup powdered sugar sifted
  • 2 tablespoons heavy cream
  • 1 teaspoon vanilla
  • ¼ cup Sprinkles

Instructions

  1. Preheat the oven to 350°. Grease a bread pan very well. Place oven rack on the top rung.
  2. In a large mixing bowl beat together with a hand mixer the butter, sugar and eggs till yellow and creamy.
  3. Combine the flour, baking powder, and salt in a separate medium bowl. Set aside.
  4. To the large mixing bowl add the milk, sour cream and vanilla mix into a batter.
  5. Using a spoon, slowly add the dry flour mixture to the wet ingredient batter.
  6. With a large spoon fold ½ cup sprinkles into the batter.
  7. Pour the batter into the prepared bread pan.
  8. Bake for 40-50 minutes. Insert a toothpick into the middle of the bread to check for doneness. Toothpick should come out clean when baked through.
  9. Remove the bread from the oven and let cool for 5 minutes.
  10. Prepare your serving dish or cooling rack for the icing of the bread.
  11. After the bread has been cooling for 5 minutes, run a knife around the edges of the bread pan to ensure the sides are loosened, then turn the bread pan upside down and gently remove the bread from the pan.
  12. Let the bread cool completely before icing.
  13. In a large mixing bowl combine the icing ingredients: powder sugar, cream, vanilla, and using a whisk, beat till smooth.
  14. Pour evenly over the bread.
  15. Top with holiday colored sprinkles.
  16. As many or as little as you want.
  17. Slice and serve.

Notes

  • Great gift idea for office coworkers, neighbors, church, or coffee with friends. Ready to serve on a dish or wrapped in a bread box with ribbon, brighten the room with one of these and you’re sure to hear “Ooos” and “Awwws”.
  • Use a toothpick to check for doneness. Insert gently into the middle. If it comes out clean, it is done, if it is still gooey, it will need a few more minutes. But, be careful not to overbake, or it will be dry and hard.
  • Storage - Will keep in a resealable bag at room temperature for up to 5 days. Will also freeze well for up to 3 months. To thaw, place in the refrigerator overnight.
