Christmas Funfetti Bundt Cake

And, I have a wonderful recipe that you can share with friends and family. Once you serve up this Christmas Funfetti Bundt Cake, it may just become a favorite.

Ingredients

Funfetti Cake Ingredients :
  • 1 C whole milk
  • 2 tsp pure vanilla extract
  • 1 C unsalted butter softened
  • 2 C sugar
  • 3 C flour
  • 1 tbsp baking powder
  • 5 large egg whites
  • 2 C Christmas Funfetti Sprinkles
  • 1 tsp shortening
Cream Cheese frosting :
  • 4 oz cream cheese softened
  • ¼ C unsalted sweet cream butter softened
  • 1 tsp pure vanilla extract
  • 1 1/2 -2 C powdered sugar
  • ¾ C Christmas Funfetti Sprinkles

Instructions

Cake Directions:

  1. Preheat oven to 350 degrees.
  2. Prepare the Bundt pan by thoroughly greasing and flouring the pan.
  3. In a medium mixing bowl, whisk together the milk and vanilla and set aside.
  4. Using a standing mixer, beat together the butter and sugar until light and fluffy.
  5. In a large mixing bowl, whisk together the flour and baking powder.
  6. Alternating between the milk and dry ingredients, gradually pour into the butter mixture and mix on low to medium speed until combined. .
  7. Using another large mixing bowl and a hand mixer, beat the eggs until stiff peaks form.
  8. Fold the egg whites into the cake batter.
  9. Mix in the 2 C of sprinkles.
  10. Pour the cake batter into the Bundt pan.
  11. Bake in the oven for 45-60 minutes or until a toothpick comes out clean in the center.
  12. Allow to cool for 15 minutes before turning out onto a wire rack.
Cream Cheese Frosting Directions
  1. Using a standing mixer, beat together the cream cheese and butter until combined and smooth.
  2. Beat in the vanilla extract.
  3. Gradually beat in the powdered sugar until combined and smooth.
  4. Pour the frosting over the Bundt cake.
  5. Sprinkle the sprinkles on top.
  6. Enjoy!
