Christmas Pear Salad

This Christmas Pear Salad with pomegranate and candied pecans is perfect for the holidays. Drizzle with our homemade poppy seed dressing.

Ingredients

For the salad:
  • 6 cups spring lettuce mix
  • 2 pears thinly sliced
  • 1/2 cup pomegranate arils
  • ½ red onion thinly sliced
  • 1 cup diced cucumbers
  • 3/4 cup candied pecans
  • 1/2 cup feta cheese
FOR THE DRESSING:
  • 1/2 cup mayonnaise
  • 2 1/2 tablespoons honey
  • 2 1/2 tablespoons whole milk
  • 2 tablespoons apple cider vinegar
  • 1 tablespoons sugar optional, to taste
  • 1/2 tablespoon minced shallot
  • 1/2 tablespoon poppy seeds
  • 1/2 teaspoon minced garlic 
  • 1/4 teaspoon ground mustard
  • 1/4 teaspoon salt

Instructions

  1. Spread the spring lettuce on a large platter. Or place it in a bowl.
  2. Arrange the pears, pomegranate, red onion, cucumbers and sugared pecans on top.
  3. Then sprinkle feta over the salad.
  4. In a small bowl or mason jar, add the ingredients for the dressing. Whisk or shake until the ingredients are well combined.
  5. Then drizzle the dressing over the salad and serve immeditely.
  6. A note about the dressing: If you're allowing people to add their own dressing, you may want to double the recipe. It makes a small amount, but it also doesn't keep well.
