This Christmas Pear Salad with pomegranate and candied pecans is perfect for the holidays. Drizzle with our homemade poppy seed dressing.

Ingredients
For the salad:
- 6 cups spring lettuce mix
- 2 pears thinly sliced
- 1/2 cup pomegranate arils
- ½ red onion thinly sliced
- 1 cup diced cucumbers
- 3/4 cup candied pecans
- 1/2 cup feta cheese
FOR THE DRESSING:
- 1/2 cup mayonnaise
- 2 1/2 tablespoons honey
- 2 1/2 tablespoons whole milk
- 2 tablespoons apple cider vinegar
- 1 tablespoons sugar optional, to taste
- 1/2 tablespoon minced shallot
- 1/2 tablespoon poppy seeds
- 1/2 teaspoon minced garlic
- 1/4 teaspoon ground mustard
- 1/4 teaspoon salt

Instructions
- Spread the spring lettuce on a large platter. Or place it in a bowl.
- Arrange the pears, pomegranate, red onion, cucumbers and sugared pecans on top.
- Then sprinkle feta over the salad.
- In a small bowl or mason jar, add the ingredients for the dressing. Whisk or shake until the ingredients are well combined.
- Then drizzle the dressing over the salad and serve immeditely.
- A note about the dressing: If you're allowing people to add their own dressing, you may want to double the recipe. It makes a small amount, but it also doesn't keep well.
