Christmas Slice fast!

Make it today eat it today. Make it gluten free using nut flour. substitute some of the sugar with honey or maple syrup for a longer keeping less crumblier result

Ingredients

  • 500 gm mixed fruit ( sultanas raisins, cranberries etc)
  • 150 gm macadamia nuts or hazelnuts or almonds
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon allspice
  • 250 gm self-raising flour 1 1/2 cups
  • 1 whole lemon zested and juiced
  • 1 teaspoon vanilla extract
  • 2 whole egg large
  • 200 gm butter
  • 250 gm brown sugar
  • 250 gm glace fruit large pieces
  • 6 whole macadamia nuts
  • 1/2 cup strawberry or apricot conserve melted

Instructions

  1. Set the oven to 170 C / 340 F Melt the butter and sugar. Adding the spices.
  2. Put the fruit, eggs, flour, zest and juice, eggs and cooled butter mixture into a stand mixer (or a large bowl) . Mix all together well to combined.
  3. Pour into the well lined tray and bake for 1 hour - 10 minutes, covering with foil if it starts to get too dark. If it gets too dark it will dry out.
  4. Cool the cake.
  5. Decorate by painting with conserve (jam) and then pressing the glace fruit onto the top.

Notes

  • !If you can't find glace fruit decorate by painting some grapes or cherries with eggwhite and dipping in caster sugar. You can also use a packet of royal icing and Christmas sprinkles.
