Ingredients

  • 100 g butter, soft
  • 100 g sugar
  • 1 egg
  • 250 g plain flour
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon extract

Instructions

  1. Beat the butter with sugar using a hand-held mixer.
  2. Add the egg and mix again to get a smooth cream-like texture.
  3. Add the vanilla and lemon extract, and sift the flour in.
  4. Use your hands to knead everything into a dough that does not stick to the hands.
  5. Cover the dough with clingfilm and refrigerate for 30 minutes.
  6. Using a rolling pin, roll the dough to a ¼ cm thickness.
  7. Dust the cookie stamper with flour, shaking off the excess flour.
  8. Keeping the stamper straight, press it into the dough firmly to form an indent.
  9. Use a round cookie cutter to cut around the stamped cookie.
  10. Arrange the cookies on a baking tray lined with non-stick baking paper.
  11. Chill the cookies for 10-15 minutes before baking them in the preheated oven at 180 degrees Celsius (350 Fahrenheit) for 10-12 minutes until pale yellow.
  12. Remove from the oven and leave to cool slightly, before transferring to the cooling rack to cool completely.
