Ingredients

  • 1 package Vanilla sugar wafers
  • 1 cup white chocolate chips
  • 1 teaspoon coconut or olive oil
  • Decorative sprinkles or M&M's, etc.

Instructions

    Cup of Yum
  1. Cover a baking sheet with wax paper or parchment paper.
  2. Combine the white chocolate chips and oil. Microwave for 30 seconds, then stir. Then, continue microwaving in 15-second intervals, stirring after each interval, until the chocolate is melted and smooth.
  3. Holding a wafer in one hand over the bowl of white chocolate, use the other hand to spoon the white chocolate on all sides of the wafer, starting about ½ ways down the cookie. Once all sides are coated lightly, place on wax paper and decorate with sprinkles or candy. Repeat as many wafer cookies as you wish.
  4. Let the coated wafer cookies sit at room temperature until the chocolate hardens. To speed up the process, put the cookies in the refrigerator.

Notes

  • Be careful not to overheat the chocolate. Microwave in short bursts and stir frequently.
  • Aim for a thin, even layer of chocolate when dipping the wafers.
  • Have your decorations ready to go before you start dipping. White chocolate sets quickly, so you'll want to sprinkle on your decorations while the chocolate is still wet.
  • You can use milk chocolate or dark chocolate instead of white chocolate.
  • A double boiler also works well to melt the chocolate.
