Festive White Chocolate Dipped Sugar Wafers are perfect for gifting, potlucks, or a fun Christmas activity with the kids.

Ingredients
- 1 package Vanilla sugar wafers
- 1 cup white chocolate chips
- 1 teaspoon coconut or olive oil
- Decorative sprinkles or M&M's, etc.
Instructions
- Cover a baking sheet with wax paper or parchment paper.
- Combine the white chocolate chips and oil. Microwave for 30 seconds, then stir. Then, continue microwaving in 15-second intervals, stirring after each interval, until the chocolate is melted and smooth.
- Holding a wafer in one hand over the bowl of white chocolate, use the other hand to spoon the white chocolate on all sides of the wafer, starting about ½ ways down the cookie. Once all sides are coated lightly, place on wax paper and decorate with sprinkles or candy. Repeat as many wafer cookies as you wish.
- Let the coated wafer cookies sit at room temperature until the chocolate hardens. To speed up the process, put the cookies in the refrigerator.
Notes
- Be careful not to overheat the chocolate. Microwave in short bursts and stir frequently.
- Aim for a thin, even layer of chocolate when dipping the wafers.
- Have your decorations ready to go before you start dipping. White chocolate sets quickly, so you'll want to sprinkle on your decorations while the chocolate is still wet.
- You can use milk chocolate or dark chocolate instead of white chocolate.
- A double boiler also works well to melt the chocolate.
