Ingredients

  • 5 bone-in pork chops , about ¾ inch (2 cm) thick
  • ½ cup bitter orange juice (or ¼ cup / 65 ml sweet orange juice + ¼ cup / 65 ml lime juice)
  • 1 zest lemon
  • 5 cloves garlic , minced
  • ½ teaspoon black pepper
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • salt
  • 6 tablespoons vegetable oil

  • Cast iron grill pan

Instructions

  1. Place the chops in a bowl or freezer bag.
  2. Add the garlic cloves, pepper, paprika, cumin and bitter orange juice. Mix.
  3. Cover and marinate for 4 hours in the refrigerator.
  4. Remove the chops from the refrigerator and leave them at room temperature for 1h30.
  5. Add oil into a large cast iron grill pan set over medium to high heat.
  6. Remove the chops from the marinade without wiping them and add them to the pan. Cook them for 4 to 5 minutes on each side.
  7. When they are well cooked, serve them immediately.
