Chuletas de Puerco

Chuletas de puerco (or chuletas de cerdo) are grilled pork chops, and one of the most popular Cuban dishes.

Ingredients
- 5 bone-in pork chops , about ¾ inch (2 cm) thick
- ½ cup bitter orange juice (or ¼ cup / 65 ml sweet orange juice + ¼ cup / 65 ml lime juice)
- 1 zest lemon
- 5 cloves garlic , minced
- ½ teaspoon black pepper
- 1 teaspoon cumin
- 1 teaspoon paprika
- salt
- 6 tablespoons vegetable oil

Instructions
- Place the chops in a bowl or freezer bag.
- Add the garlic cloves, pepper, paprika, cumin and bitter orange juice. Mix.
- Cover and marinate for 4 hours in the refrigerator.
- Remove the chops from the refrigerator and leave them at room temperature for 1h30.
- Add oil into a large cast iron grill pan set over medium to high heat.
- Remove the chops from the marinade without wiping them and add them to the pan. Cook them for 4 to 5 minutes on each side.
- When they are well cooked, serve them immediately.
