Cilantro Cucumber Dip
This cilantro cucumber dip blends plain yogurt and cream cheese with fresh cucumber, cilantro, green onion, and garlic, resulting in a creamy, herby spread. It balances the cool crunch of cucumber with aromatic cilantro and a subtle garlicky hint. The smooth texture makes it ideal for dipping vegetables, crackers, or as a light accompaniment to various snacks.
Ingredients
- 6 oz yogurt plain, Greek
- 4 oz cream cheese
- ¼ cup cucumber chopped
- 1 cup cilantro approx 1/3 bunch, fresh leaves
- 2-3 green onion stalks
- 1 clove garlic
- ¼ tsp salt
SERVE WITH
- nut-thin crackers gluten free
- cucumber slices
- celery sticks
- bell pepper sliced
- radish sliced
- carrot
Instructions
- Combine yogurt, softened cream cheese, cucumber, cilantro, green onion, garlic and salt in a food processor and blend.
- Dunk a cracker to taste and add more of your favorites, if desired or keep the dip as is -- the ratio in this recipe had me swooning!
- Garnish with fresh cilantro and dive in with crackers and veggies!
Notes
- You can prepare this dip ahead of time and store it in the refrigerator for up to 4 days to ease snack or party preparation.
- If you do not have a food processor, a blender can be used, or grate and finely chop the ingredients manually before mixing.
