Ingredients

  • 2 cups coleslaw mix
  • 2 cups julienned jicama
  • 1 cup julienned carrots
Dressing
  • ½ cup mayonnaise
  • 1 ½ tablespoons chopped fresh cilantro
  • ½ teaspoon cumin
  • 2 tablespoons fresh lime juice
  • salt and pepper to taste

Instructions

  1. Combine dressing ingredients together and set aside.
  2. Prepare and combine vegetables.
  3. Stir in the dressing and let chill 1 hour before serving.
