CILANTRO-LIME AVOCADO SALSA

Ingredients

  • avocado ripe, pitted and diced
  • onion red; finely chopped; 1/2 cup
  • cilantro fresh, chopped
  • lime juice fresh, about 2 limes
  • jalapeño seeded and minced, or more to taste
  • salt or to taste
  • tomato diced tomato, corn fresh/frozen/canned, garlic minced

Instructions

  1. Combine ingredients: In a medium bowl, gently combine the diced avocados, red onion, cilantro, lime juice, jalapeños, and salt.
  2. Mix gently: Toss gently to combine all the ingredients. Be careful not to mash the avocados too much.
  3. Taste and adjust: Taste and adjust the seasoning as needed, adding more lime juice, salt, or jalapeño for heat.
  4. Serve: Serve immediately or chill for a short time before serving.

Notes

  • Avocado Ripeness: Use ripe but firm avocados. They should yield slightly to gentle pressure.
  • Lime Juice: Fresh lime juice is essential for the bright flavor of this salsa. Don't use bottled lime juice.
  • Jalapeños: Adjust the amount of jalapeños to your desired level of heat. You can also use other types of peppers, such as serrano peppers.
  • Onion: Red onion adds a nice color and flavor, but you can substitute with white or yellow onion if you prefer.
  • Additions: Feel free to add other ingredients to the salsa, such as diced tomatoes, corn, or minced garlic.
  • Storage: Avocado salsa is best served fresh. If you must store it, press a piece of plastic wrap directly onto the surface of the salsa to prevent browning and refrigerate for up to a day. However, it will taste best if made and served the same day.
