Ingredients

  • 1 pound boneless skinless chicken breast cut into 1" pieces
  • 1 cup cilantro
  • 1/4 cup lime juice
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1/3 cup chicken broth

Instructions

  1. Add all ingredients (except chicken) to a blender or food processor. Blend until smooth.
  2. Add chicken to the slow cooker and pour cilantro mix over it.
  3. Cook on low for 3-4 hours.
  4. Serve over rice and enjoy!
