Cilantro Lime Coleslaw

Ingredients

  • 1 8 oz. bag coleslaw mix
  • ¼ cup cilantro packed
  • ¼ cup mayonnaise
  • ¼ cup sour cream
  • 1 ounce lime juice fresh squeezed
  • ½ teaspoon lime zest
  • ¼ teaspoon ground cumin
  • ¼ teaspoon garlic powder
  • ⅛ teaspoon ground cayenne
  • ¼ teaspoon salt
  • ⅛ teaspoon ground black pepper

Instructions

  1. Add the coleslaw mix to a large bowl and discard the included dressing package.
  2. Add the remaining ingredients to a large glass and use an immersion blender to blend until smooth. You can also add them to a food processor.
  3. Pour the dressing over the slaw and toss to coat.
  4. Cover and place in the refrigerator for 2 hours to let the flavors meld. Enjoy by itself or on sandwiches.

Notes

  • This recipe is the perfect amount for a family of 4 or 5. If you want a large batch, simply double or triple the recipe for a backyard BBQ.
  • Store covered in the refrigerator for up to 3 days.
