Cilantro Lime Rice (Chipotle's Copycat)

Made with basmati rice, fresh limes, and cilantro, it's a refreshing spin on your typical bowl of white rice and your new favorite side dish.

Ingredients

  • 3 tbsp unsalted butter
  • 2 cups basmati rice
  • 3 cups water
  • 1 tsp salt
  • 1 tbsp lime zest
  • 3 tbsp lime juice
  • 1 cup fresh cilantro chopped

Instructions

  1. Preheat a deep cast iron pan or skillet with butter. Add rice and cook on medium-high until rice turns golden brown.
  2. Add in water, lime zest, and salt. Stir to combine.
  3. Bring it to a boil and turn the heat down to low. Cover the rice with a lid and let it cook for 15 minutes.
  4. Remove rice from heat and let it sit for 10 minutes. Using a fork, fluff the rice to loosen the grains from one another.
  5. Add fresh cilantro and a squeeze of lime juice right before serving. Enjoy!
