Cilantro Lime Rice Recipe

Cilantro lime rice is so easy to make, the perfect side dish for burrito bowls, grilled meats, stir fries, and more, loaded with zesty lime and cilantro.

Ingredients

  • 2 cups water
  • salt to taste
  • 1 cup extra long grain rice NOTE: Any rice will work for this recipe, but check the packaging for water/liquid amounts and cooking time
  • 2 tablespoon lime juice
  • 1 teaspoon fresh lime zest
  • ¼ cup fresh chopped cilantro
  • 1 small serrano minced (optional, for spicy)
  • 1 teaspoon vegetable oil I love extra virgin olive oil

Instructions

  1. Add the water with salt to taste to a pot and bring to a boil.
  2. Stir in the rice. Bring the rice to a boil, then cover and reduce the heat to a simmer.
  3. Cook, covered, for 15-20 minutes, or until the rice absorbs all of the liquid. Do not stir while cooking. If the rice gets too dry, add a few tablespoons of extra water.
  4. Remove from heat and let sit for 5 minutes.
  5. Fluff with a fork and stir in lime juice, lime zest, chopped cilantro, serrano (if using), and oil.
  6. Serve and enjoy.

Notes

  • This recipe works with any cooked rice. Just cook according to packaging directions, then stir in the additional ingredients.
  • Try it with other oils, like chili oil for a spicy version, or a flavored oil.
  • Consider stock instead of water for more flavorful rice.
  • Garlic is a nice addition, as are chili flakes.
