Cilantro lime rice is so easy to make, the perfect side dish for burrito bowls, grilled meats, stir fries, and more, loaded with zesty lime and cilantro.

Ingredients
- 2 cups water
- salt to taste
- 1 cup extra long grain rice NOTE: Any rice will work for this recipe, but check the packaging for water/liquid amounts and cooking time
- 2 tablespoon lime juice
- 1 teaspoon fresh lime zest
- ¼ cup fresh chopped cilantro
- 1 small serrano minced (optional, for spicy)
- 1 teaspoon vegetable oil I love extra virgin olive oil

Instructions
- Add the water with salt to taste to a pot and bring to a boil.
- Stir in the rice. Bring the rice to a boil, then cover and reduce the heat to a simmer.
- Cook, covered, for 15-20 minutes, or until the rice absorbs all of the liquid. Do not stir while cooking. If the rice gets too dry, add a few tablespoons of extra water.
- Remove from heat and let sit for 5 minutes.
- Fluff with a fork and stir in lime juice, lime zest, chopped cilantro, serrano (if using), and oil.
- Serve and enjoy.
Notes
- This recipe works with any cooked rice. Just cook according to packaging directions, then stir in the additional ingredients.
- Try it with other oils, like chili oil for a spicy version, or a flavored oil.
- Consider stock instead of water for more flavorful rice.
- Garlic is a nice addition, as are chili flakes.
