Cilantro Rice
Cilantro Rice features fluffy long-grain white rice cooked until tender and flavored with fresh cilantro, lime juice, and lime zest. The herb and citrus combine to brighten the rice with fresh, zesty notes. It can be prepared on the stove, in a rice cooker, or Instant Pot, making it a versatile side dish for various meals.
Ingredients
- 1 cup long-grain white rice
- 2 cups water
- 1 teaspoon salt sea salt
- 3 Tablespoons cilantro chopped, fresh
- 2 Tablespoons lime juice fresh
- 1 teaspoon lime zest or to taste
Instructions
- Bring the water to a boil in a medium saucepan. Add rice and salt to the water. Cover, reduce heat to low, and simmer until the rice is tender, about 20 minutes. You can also cook the rice in a rice cooker or Instant Pot, if desired. See instructions below.
- Combine chopped cilantro with lime juice and lime zest in a bowl.
- Add warm rice, toss and serve.
- This rice is best served immediately but can be cooled and stored in the refrigerator for 3-4 days. Reheat any leftovers in the microwave until piping hot.
Notes
- Brown rice can be used instead of white rice; it will take approximately 45 minutes until tender.
- To cook in a rice cooker, add rice and salt, then fill water to the appropriate line and follow the device instructions.
- For Instant Pot preparation, cook white rice with water and salt at high pressure for 4 minutes, then allow natural pressure release for 10 minutes before fluffing and adding cilantro and lime.
- Serve the rice warm soon after preparation for best flavor and texture. Store any leftovers in the refrigerator and reheat thoroughly before serving.
