Cinnamon Apple Bread

Ingredients

  • 2 medium apples diced
  • 1 tablespoon melted butter or coconut oil
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon cinnamon
  • 1 ½ cups flour
  • 1 ½ teaspoon baking powder
  • ⅛ teaspoon salt a pinch
  • 1 ½ teaspoons cinnamon
  • 1 egg
  • ⅓ cup melted coconut oil or butter
  • ⅓ cup maple syrup or honey

  1. Adjust the oven rack to the middle oven position and preheat the oven to 350°F. Grease a bread loaf pan or line it with parchment paper for easy lifting.
  2. In a pan, add butter, diced apples, honey, and cinnamon. Cook apples down for 3 minutes until they’re soft.
  3. In a large bowl, whisk the flour, cinnamon, baking powder, and salt together.
  4. Add the egg, melted butter, and honey, and whisk into a batter. Add cooked apples, and fold over to combine.
  5. Pour the apple batter into the prepared pan and cook in the preheated oven for 45 minutes. At this point, make a tent with foil and cook for an additional 10 to 15 minutes until a toothpick comes out clean when inserted in the middle.
  6. Remove from the oven and allow the apple loaf to cool down before slicing.
