Cinnamon Apple Oatmeal Carmelitas. Bar cookies made with butter, flour and oats. Caramel is drizzled over a partially cooked dough base and diced apple.

Ingredients
- 11 oz. Kraft caramels
- 1/2 cup heavy cream
- 2 Honeycrisp Apples diced small
- 1 cup all purpose flour
- 1 cup rolled oats
- 3/4 cup brown sugar
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3/4 cup melted butter
- 1/2 cup Chopped Pecans
- 1 /2 tsp cinnamon

Instructions
- Preheat oven to 350°F. Peel and dice the apples, set aside.
- In a small saucepan over low heat melt the caramels and heavy cream, stirring until smooth. Set aside to cool slightly.
- Combine in a medium bowl the flour, oats, brown sugar, soda, salt and melted butter to form crumbs. Press half the crumbs into the bottom of a parchment lined 9x9" pan. Bake for 10 minutes. With the remaining crumb mixture I added a half cup of chopped pecans for flavor and texture.
- Sprinkle the diced apples over the partially baked crust. Pour the cooled caramel over the apples, sprinkle cinnamon on top and remaining crumb mixture.
- Bake for 22 minutes. Allow to set and cool, middle might appear undone, but will set and firm up. Chill bars for 60 minutes for easy cutting.
