Cinnamon brown sugar pumpkin muffins

These easy cinnamon brown sugar pumpkin muffins are moist, delicious and the perfect grab-and-go breakfast or snack for fall.

Ingredients

  • 3 cups flour
  • 2 tsp baking powder 1
  • `1 tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp ground ginger
  • ¼ tsp allspice
  • 2 cups packed brown sugar
  • 1 cup pumpkin puree (cook 1½ cups pumpkin until soft)
  • 4 large eggs
  • 1 tsp vanilla extract
  • 3/4 cup vegetable oil
For the topping (optional)
  • 2 tbsp brown sugar
  • 1 tsp cinnamon

Instructions

  1. Preheat the oven to 180°C/350°F and a line a 12-hole muffin pan with paper liners.
  2. Whisk together all the dry ingredients in a large mixing bowl.
  3. In a separate bowl or mixing jug, combine the brown sugar, pumpkin, eggs and vegetable oil.
  4. Mix until just combined.
  5. Spoon the batter into the prepared muffin pan, filling the liners 3/4 full.
  6. Combine cinnamon and sugar and sprinkle over the top.
  7. Place into the preheated oven and bake for 15-20 minutes until a toothpick inserted comes out clean. Remove from the oven and allow to cool completely before serving.
