Cinnamon Donut Bread
Cinnamon Donut Bread is a loaf made by combining spiced reduced apple cider, butter, brown sugar, eggs, and moist ingredients like applesauce and vanilla Greek yogurt. Aromatic spices such as cinnamon and nutmeg flavor the batter, which is baked until risen. The loaf is topped with a cinnamon-sugar mixture for added sweetness and texture, giving a nod to donut flavor in a bread form.
Ingredients
- 1 cup apple cider ~½ c simmered & reduced, spiced
- 1 tick butter room temperature, unsalted
- ¾ cup light brown sugar
- 2 egg
- 2 tsp vanilla extract
- ⅓ cup applesauce sweetened for a sweeter bread
- ½ cup Greek yogurt vanilla flavor
- 1 tsp nutmeg
- 2 tsp ground cinnamon
- 2 tsp baking powder
- 2 cups all-purpose flour
- 1 ½ tbsp cornstarch
- ¼ tsp salt
Topping
- 3 tbsp white sugar
- 1 ½ tsp ground cinnamon
Instructions
- Start by heating a small sauce pan to medium heat. Heat the apple cider, stirring constantly, until it’s reduced to a ½ a cup (8-10 minutes), then remove from heat.
- Preheat the oven to 350°F, then in a stand mixer, combine room temperature butter and brown sugar until smooth.
- Add in eggs and vanilla extra and beat again.
- Pour in the applesauce and greek yogurt, beating again until all of the wet ingredients are smooth.
- Add in all of the dry ingredients. Beat until well combined.
- Lastly, pour in the cooled, reduced apple cider. Mix until batter is consistent throughout.
- Line a loaf pan with parchment paper and spray with baking spray. Add all of the batter to the prepared loaf pan and bake in the preheated oven for 38-45 minutes or until bread has risen and toothpick comes out clean.
- In a separate smaller bowl, combine the toppings ingredients and stir.
- When the bread comes out, sprinkle the cinnamon-sugar mixture on top and slice. Enjoy!
Notes
- Be cautious when adding mix-ins; too many can prevent the bread from rising properly.
- Store the bread covered at room temperature for up to three days or refrigerate for up to five days to maintain freshness.
- When using a hand mixer, ensure butter is softened at room temperature for at least 24 hours for proper mixing.
