Cinnamon Donut Bread
Description
This bread starts with reducing apple cider over heat to intensify its flavor. The batter combines softened butter and brown sugar, eggs, vanilla extract, applesauce, and vanilla Greek yogurt, creating a moist base. Ground nutmeg and cinnamon add warm spice notes, while baking powder and cornstarch contribute to the bread's texture and rise. The flour and salt complete the dry mix.
After mixing, the batter is baked in a lined loaf pan until a toothpick comes out clean, indicating doneness. A topping mixture of white sugar and ground cinnamon is sprinkled over the bread post-baking to emulate the sweet coating of a classic cinnamon donut. The bread offers a moist crumb with seasonal spice and a sugary topping.
The recipe cautions that add-ins like nuts or chocolate chips should be used sparingly to avoid weighing down the loaf. Storage recommendations suggest keeping the bread covered at room temperature for up to three days or refrigerated for up to five. It also advises that the butter should be fully softened for best results when using a hand mixer.
Ingredients
- 1 cup apple cider ~½ c simmered & reduced, spiced
- 1 tick butter room temperature, unsalted
- ¾ cup light brown sugar
- 2 egg
- 2 tsp vanilla extract
- ⅓ cup applesauce sweetened for a sweeter bread
- ½ cup Greek yogurt vanilla flavor
- 1 tsp nutmeg
- 2 tsp ground cinnamon
- 2 tsp baking powder
- 2 cups all-purpose flour
- 1 ½ tbsp cornstarch
- ¼ tsp salt
Topping
- 3 tbsp white sugar
- 1 ½ tsp ground cinnamon
Instructions
- Start by heating a small sauce pan to medium heat. Heat the apple cider, stirring constantly, until it’s reduced to a ½ a cup (8-10 minutes), then remove from heat.
- Preheat the oven to 350°F, then in a stand mixer, combine room temperature butter and brown sugar until smooth.
- Add in eggs and vanilla extra and beat again.
- Pour in the applesauce and greek yogurt, beating again until all of the wet ingredients are smooth.
- Add in all of the dry ingredients. Beat until well combined.
- Lastly, pour in the cooled, reduced apple cider. Mix until batter is consistent throughout.
- Line a loaf pan with parchment paper and spray with baking spray. Add all of the batter to the prepared loaf pan and bake in the preheated oven for 38-45 minutes or until bread has risen and toothpick comes out clean.
- In a separate smaller bowl, combine the toppings ingredients and stir.
- When the bread comes out, sprinkle the cinnamon-sugar mixture on top and slice. Enjoy!
Notes
- Be cautious when adding mix-ins; too many can prevent the bread from rising properly.
- Store the bread covered at room temperature for up to three days or refrigerate for up to five days to maintain freshness.
- When using a hand mixer, ensure butter is softened at room temperature for at least 24 hours for proper mixing.
