Description

The recipe begins by cutting thick slices of preferably stale white bread into three batons each after removing the crust to form rectangular sticks. These sticks are quickly dipped in a mixture of egg, milk, and a pinch of salt to coat without soaking through, preserving their shape and avoiding sogginess. Cooking in batches in butter over medium-high heat develops a golden crust on each side.

Immediately after cooking, the hot sticks are rolled in a cinnamon-sugar mixture so the sugar adheres well. The resulting texture is crispy on the outside, tender inside, and sweet with aromatic cinnamon. Maple syrup serves as a classic accompaniment for dipping.

  • 4 white bread Note 1, thick slices, preferably stale
  • 2 egg
  • 1/4 cup milk
  • salt
  • 1/3 cup white sugar
  • 1 tsp cinnamon powder
  • 3 tbsp butter
  • maple syrup optional, to serve

Instructions

  1. Remove crust of each slice, then cut each into 3 equal thick batons.
  2. Combine the eggs, milk and a pinch of salt in a bowl large enough to roll the bread sticks in.
  3. Combine the cinnamon and sugar on a plate.
  4. Melt 2 tbsp of the butter in a large pan over medium high heat.
  5. Roll the sticks in the egg mixture quickly (do not soak them), shake off excess and place in pan. Cook in 2 batches.
  6. Turn to cook each side until golden.
  7. Immediately transfer to the plate with the cinnamon sugar and roll to coat. It's important to do this quickly while they are hot straight out of the pan so it sticks.
  8. Melt remaining butter and cook the remaining french toast sticks.
  9. Serve immediately with maple syrup to dunk the sticks in.

Notes

  • Use thick slices of stale bread to keep the French toast sticks firm and prevent sogginess.
  • Removing the crust and cutting into batons helps create uniform sticks about 1.7 cm thick.
  • Roll cooked sticks in cinnamon sugar immediately while hot for the coating to stick well.
