Ingredients

  • 1 1/2 cups confectioner’s sugar (divide 1/2 cup)
  • 1 cup butter softened
  • 3/4 cup Finely chopped pecans
  • 1/2 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 350 degrees F and line a cookie baking sheet with parchment paper.
  2. Add the butter and sugar into a bowl of a stand mixer with the paddle attachment. Beat until the mixture is smooth and creamy.
  3. Then add the vanilla, cinnamon, and pecans and mix until combined about 1 minute.
  4. Add the flour and mix just until the cookie dough is formed.
  5. Shape the cookie dough into 1-inch balls, and flatten slightly.
  6. Place on cookie sheets about 1 inch apart.
  7. Bake for 12 to 15 minutes or until lightly browned.
  8. Transfer the Mexican wedding cookies to a cooking rack and allow them to cool for 10 minutes.
  9. Gently coat each cookie with powdered sugar and set it on a serving plate.
