Ingredients
- 1 1/2 cups confectioner’s sugar (divide 1/2 cup)
- 1 cup butter softened
- 3/4 cup Finely chopped pecans
- 1/2 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon ground cinnamon
Instructions
- Preheat oven to 350 degrees F and line a cookie baking sheet with parchment paper.
- Add the butter and sugar into a bowl of a stand mixer with the paddle attachment. Beat until the mixture is smooth and creamy.
- Then add the vanilla, cinnamon, and pecans and mix until combined about 1 minute.
- Add the flour and mix just until the cookie dough is formed.
- Shape the cookie dough into 1-inch balls, and flatten slightly.
- Place on cookie sheets about 1 inch apart.
- Bake for 12 to 15 minutes or until lightly browned.
- Transfer the Mexican wedding cookies to a cooking rack and allow them to cool for 10 minutes.
- Gently coat each cookie with powdered sugar and set it on a serving plate.
