Cinnamon Raisin Baked Oatmeal
This Cinnamon Raisin Baked Oatmeal features rolled oats soaked and baked with almond milk, mashed banana, and warming cinnamon. Raisins add bursts of sweetness, while baking produces a golden, soft-tender texture perfect for a hearty breakfast or snack. A drizzle of coconut butter or a simple glaze adds an optional touch of richness and sweetness.
Ingredients
- 2 cups rolled oats old-fashioned
- 2 cups almond milk or non-dairy milk of choice, unsweetened
- 1 banana ½ cup, mashed
- 1 Tablespoon Flaxseed ground
- 1 Tablespoon coconut oil melted
- 1 teaspoon vanilla extract
- 1 ½ teaspoons cinnamon
- 1 teaspoon baking powder
- ½ teaspoon salt sea salt
- ¾ cup raisins plus more for topping
- coconut butter for drizzling (or make the glaze)
Glaze
- ¼ cup powdered sugar
- 2 teaspoons non-dairy milk
Instructions
- Preheat the oven to 375° F and spray an 8×8 inch square baking dish with cooking spray.
- In a large bowl, mix together the oats, baking powder, cinnamon, and salt.
- Add in the banana, milk, flaxseed, coconut oil and vanilla. Stir to combine.
- Fold in raisins.
- Pour oatmeal mixture into the prepared baking dish. Scatter a few raisins across the top.
- Bake for 35 to 40 minutes, until the top is nicely golden. Remove from the oven and let cool for a few minutes. Portion and serve. Drizzle each portion with coconut butter or make the homemade glaze by mixing together powdered sugar with non-dairy milk and drizzle the glaze over top.
