Cinnamon Roll Mini Donuts

These mini donuts combine the great taste and texture of a cake donut with the warm buttery cinnamon sugar flavors of a cinnamon roll.

Ingredients

Donut
  • 2 c all-purpose flour
  • ¾ c white sugar
  • 2 t baking powder
  • ¼ t ground nutmeg
  • 1 t salt
  • 1 T shortening
  • ¾ milk
  • 2 eggs
  • 1 t vanilla extract
Cinnamon Topping
  • ½ c butter melted
  • 1 c brown sugar packed
  • 2 t cinnamon
Cream Cheese Frosting
  • 2 T cream cheese softened
  • 2 T milk
  • 1 c powdered sugar

Instructions

  1. Preheat the oven to 325 degrees
  2. Grease the donut pan
  3. in a large bowl combine flour, sugar, baking powder, nutmeg and salt
  4. cut in shortening with a fork or your fingers
  5. in a small bowl combine milk, eggs and vanilla extract
  6. gradually pour milk mixture into dry ingredients and mix, dough will be thick
  7. spoon into a plastic storage bag and seal closed
  8. cut a small corner from the bottom and set aside
  9. spoon 1 teaspoon of cinnamon sugar mixture into each of the bottoms of the donut molds
  10. squeeze plastic bag to fill donut mold with dough
  11. each mold should be filled 3/4 of the way
  12. bake for 8-10 minutes until the top of the donut bounces back
  13. allow donuts to cool for 5-10 min and twist before removing from pan
  14. while they cool combine the cream cheese, milk and powdered sugar in a small bowl
  15. drizzle or dunk donut into cream cheese frosting.
