Cinnamon Roll Muffins

Enjoy all the flavor of cinnamon rolls but in an easy muffin. This Cinnamon Roll Muffins recipe is simple but delicious.

Ingredients

For the Muffins:
  • 2 cups all purpose flour
  • 1 Tbsp baking powder
  • 1/2 tsp salt
  • 1/4 cup granulated sugar
  • 1/4 cup butter melted and cooled
  • 1 large egg
  • 1 cup milk
For the Filling and Topping:
  • 1 cup brown sugar packed
  • 3 teaspoon ground cinnamon
  • 3 Tbsp butter melted
For the Glaze:
  • 1 cup powdered sugar
  • 1 Tbsp milk (enough to make a good drizzling consistency.
  • 1/2 tsp vanilla

Instructions

  1. Preheat the oven to 375 degrees Fahrenheit and line a muffin tin with muffin liners.
  2. In a large mixing bowl, stir together the flour, baking powder, salt and granulated sugar.
  3. In a separate bowl, whisk together the melted butter, egg and milk.
  4. Gradually add the wet ingredients into the dry ingredients and stir until just combined.  Be careful not to over mix the batter.
  5. In a small separate bowl, stir together the filling/topping ingredients.  Stir half of this mixture into the batter.
  6. Place approximately 1/4 cup of the batter into each muffin.  Sprinkle the remaining topping mixture on top.
  7. Bake the muffins for 12-15 minutes until a toothpick inserted into the center of the muffin comes out clean.
  8. Let the muffins cool in the pan for 10 minutes and then transfer to a wire rack to cool completely.
  9. Mix together the glaze ingredients.  Drizzle the glaze over the top of the muffins and then they are ready to serve and enjoy!

Notes

  • Store the leftover muffins in an airtight container at room temperature for up to 2-3 days or refrigerate them for up to 1 week.
