Cinnamon Sugar Pumpkin Bread

Cinnamon sugar pumpkin bread makes two loaves of moist pumpkin bread complete with a cinnamon sugar filling and topping.

Ingredients

Filling/Topping
  • 1 cup granulated sugar
  • 1/2 cup Chopped Pecans
  • 1 teaspoon cinnamon
Bread
  • 1/2 cup vegetable oil
  • 1 ¾ cups granulated sugar
  • 2 large eggs
  • 15 oz can pumpkin puree
  • 2 cups all-purpose flour
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 325F. Grease and flour two 8 x 4-inch loaf pans.
  2. To make the topping, stir together the granulated sugar, pecans, and cinnamon until combined.
  3. Set aside.
  4. To make the bread, whisk oil and sugar together in a large bowl. Mixture will look like wet sand.
  5. Whisk in eggs until well-combined.
  6. Add the pumpkin puree and whisk until well-combined.
  7. Whisk in the flour, salt, pumpkin pie spice, baking soda, baking powder, and salt until just combined. Overmixing the bread will cause it to be tough.
  8. Divide the half batter evenly between the prepared pans. You will use 1/4 of the total batter per pan.
  9. Sprinkle 1/4 of the filling over the batter in each pan.
  10. Divide remaining half of the batter between the two pans.
  11. Sprinkle 1/4 of the topping over the batter in each pan.
  12. Bake for 40-60 minutes, or until a wooden toothpick inserted into the center comes out clean.
  13. Let the loaves cool in the pans for 10 minutes, and then remove to a wire cooling rack to finish cooling.

Notes

  • Nuts: You can omit the nuts if you prefer. 
  • Vegetable oil: You can use canola oil, vegetable oil, or even a light olive oil in this recipe.
  • Pumpkin puree: Be sure to buy pumpkin puree not pumpkin pie mix.
  • Flour: To properly measure the flour, stir to break it up, lightly spoon into measuring cup, and then level.
  • Pumpkin pie spice: It can be difficult or expensive (or both) to purchase pumpkin pie spice. You can make your own pumpkin pie spice with this recipe.
  • Greasing the pan: I like to use a cooking spray with flour in it like Baker’s Joy.
