Citrus Honey Roasted Carrots get tossed with olive oil, salt, pepper, orange zest and honey before roasting to a golden delicious, sticky, caramelized finish.

Ingredients

  • 2 lbs long carrots
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 4 tbsp honey (separated)
  • 1 orange (2 tbsp, zest only)

Instructions

  1. Preheat the oven to 400°F.
  2. Peel and trim the ends of each carrot. Toss with olive oil, kosher salt and black pepper.
  3. Line a tray with parchment paper and spread the seasoned carrots out, not overlapping.
  4. Zest half of an orange over the carrots and drizzle with 2 tablespoons of honey.
  5. Roast for 15-20 minutes, depending on size of carrots. Zest the other half of the orange and drizzle the remaining honey on top after roasting. Serve immediately.
