Ingredients

  • 2 lb pork , cut into 1 inch (2,5 cm) cubes
  • salt
  • 2 cups flour
  • 3 eggs , lightly beaten
  • 2 tablespoons water
  • 2 cups seasoned italian breadcrumbs
  • Frying vegetable oil
Equipment
  • Wooden skewers (about 5 inches / 12 cm)

  1. Preheat the oven to 350 F (175°C).
  2. Season the pork with salt and thread it onto the skewers.
  3. Arrange three deep dishes on the work surface, and fill the first with flour, the second with beaten eggs and the last with seasoned Italian breadcrumbs.
  4. Roll the pork skewers in the flour, dip them in the eggs, coating all sides, then roll them in the breadcrumbs.
  5. Dip the skewers again in the eggs and then in the breadcrumbs.
  6. In a large frying pan, heat a large volume of oil over medium heat and bring it to a temperature of 350 F (175°C), a temperature that must be maintained throughout frying.
  7. Dip the pork skewers and fry them until the meat is golden brown.
  8. Remove the skewers from the oil, drain them, place them in a baking dish and cover them with aluminum foil.
  9. Bake them for about 20 minutes, then remove the foil and bake uncovered for 5 minutes for a crispy breading.
