Ingredients

  • 1 shallot minced
  • 1 tablespoon butter
  • 2 cups red wine Burgundy if available
  • 1 bouquet garni
  • 1 cup demi glace
  • salt to taste
  • black pepper to taste

Instructions

    Cup of Yum
  1. Sauté the shallot in butter over medium-high heat until translucent.
  2. Add the red wine and bouquet garni. Reduce by two-thirds.
  3. Add the demi-glace and reduce until the sauce is thick enough to coat the back of a spoon.
  4. Season with salt and pepper.
