Classic Greek Pasta Salad, Ripe flavorful tomatoes, along with crispy cucumber, Kalamata olives, tender pasta, sprinkled with good feta and a simple dressing made with extra virgin olive oil.

Ingredients
- 1 cup dry pasta, rotini or penne - you can use whole grain if you wish
- 1 cup cherry tomatoes sliced in half
- 1 small cucumber, about 1/2 cup chopped in 1/2 inch pieces
- 3 tablespoons sliced kalamata olives
- 2 tablespoons capers
- 1 tablespoon oregano
- 2 ounces feta crumbled
For the dressing
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
Instructions
For the salad
- Boil the pasta as instructed and drain. If pre-boiling pasta, add a bit of olive oil after boiling, so the pasta does not stick together.
- In a large bowl add the pasta, tomatoes, cucumber, olives and capers and gently mix.
- Add the dressing and sprinkle over the oregano, toss the salad.
- Sprinkle the feta and gently toss again and serve.

- In a small bowl mix the with a fork the olive oil and vinegar (it should thicken)
Notes
- * Salt in not needed as the olives, capers and feta already have salt.
