Classic Pecan Pie

Classic Pecan Pie features a rich, sweet filling made from corn syrup, eggs, sugar, melted butter, vanilla, and pecans, poured into a deep-dish pie crust and baked until set. The mixture yields a thick, custard-like texture with a crunchy pecan topping. This dessert is known for its sticky, caramelized consistency balanced by the nutty crunch, making it a traditional choice for holidays or special occasions.

Description

This Classic Pecan Pie begins with a filling made by mixing corn syrup, eggs, sugar, melted butter, and vanilla extract, creating a smooth, sweet base. Chopped pecans are stirred in and the mixture is poured into an unbaked or frozen deep-dish 9-inch pie crust. The pie is baked at 350°F for 60 to 70 minutes until the center reaches approximately 200°F and springs back lightly to the touch, indicating doneness.

The resulting pie has a dense, almost custard-like filling with pronounced sweetness balanced by the buttery flavor of pecans. The texture combines a gooey interior with a crisp crust and crunchy nuts on top. To avoid overbrowning, foil can be used on the crust edges during baking.

After baking, the pie is cooled on a wire rack for about two hours before serving, allowing the filling to set properly. This pecan pie pairs well with whipped cream or ice cream and is commonly enjoyed during autumn and winter holidays.

Before filling the crust, spraying the pie pan with cooking spray helps with cleanup, and it is recommended to place the pie on a cookie sheet when using a frozen crust for easier handling in the oven.

Ingredients

Servings
  • 1 cup corn syrup Karo® brand, light or dark
  • 3 egg
  • 1 cup sugar
  • 2 tablespoons butter melted
  • 1 teaspoon vanilla extract pure
  • 6 ounces pecans 1 1/2 cups
  • 1 pie crust 9-inch; unbaked or frozen; deep-dish

Instructions

  1. Preheat oven to 350°F.
  2. Mix corn syrup, eggs, sugar, butter and vanilla using a spoon. Stir in pecans. Pour filling into pie crust.
  3. Bake on center rack of oven for 60 to 70 minutes (see tips for doneness, below). Cool for 2 hours on wire rack before serving.
  4. To use prepared frozen pie crust: Place cookie sheet in oven and preheat oven as directed. Pour filling into frozen crust and bake on preheated cookie sheet.

Notes

  • Check for doneness when the center of the pie reaches 200°F and springs back lightly upon tapping.
  • Spray the pie pan with cooking spray before placing the crust to aid cleanup.
  • If the crust edges brown excessively, cover them with foil during baking to prevent overbrowning.
