Cleansing & Detox Simple Greek Lettuce Salad

Ingredients

For The Salad:
  • 1 small romaine lettuce
  • 2 spring onions
  • a handful of dill
  • a handful of parsley
  • Optional: lamb's lettuce
For The Dressing:
  • 1 teaspoon honey
  • ½ lemon juice
  • 2 tablespoons apple cider vinegar
  • 6 tablespoons olive oil
  • kosher salt
  • ground pepper

Instructions

For The Salad:
    Cup of Yum
  1. Wash lettuce and let it air dry so it will be airy and crunchy.
  2. Finely chop the lettuce, dill, parsley, and spring onions and add to a salad bowl.
For The Dressing:
  1. In a bowl whisk together all of the ingredients for the dressing.
  2. Pour over the greens and mix well.
  3. Serve in a plate or salad bowl. Top with few lamb's lettuce leaves.

Notes

  • -This isn’t supposed to be a soggy salad. Mix it up with the dressing, right when you are about to serve it. Do not let it stand as it will lose its crunchiness.
  • -Try and find a lettuce that looks fresh and crunchy with light green leaves. Don’t buy the very dark green and old ones.
