Coconut Blueberry Oatmeal

Ingredients

Oatmeal
  • 1 (14-ounce) can unsweetened coconut milk
  • 3-5 tablespoons honey
  • 2 teaspoons vanilla extract
  • 1 cup water
  • ¼ teaspoon sea salt
  • 1 cup quick oats
  • 1 cup blueberries, divided
  • 2 tablespoons brown sugar
Suggested Toppings
  • toasted coconut honey almond granola
  • fresh berries
  • dried cranberries
  • chia seeds

Instructions

  1. Add the unsweetened coconut milk, honey, vanilla extract, and water in a medium saucepan and bring to a boil over medium-high heat.
  2. Stir in sea salt and quick oats and bring it back to a boil, stirring constantly. Reduce the heat to low and cover.
  3. Simmer on low for 5 minutes, lifting the lid and stirring every minute or so. Add in ½ cup blueberries, cover, and simmer for another 5 minutes, or until the oats are cooked through and the mixture is super creamy.
  4. Remove the pan from heat and add in the remaining ½ cup blueberries and brown sugar.
  5. Cover and allow to sit for 5-10 minutes to thicken up.
  6. Top with desired toppings and enjoy!
