Ingredients

  • 1 cup unsalted butter softened
  • ½ cup packed brown sugar
  • 1 cup sugar
  • 2 eggs
  • 2 ¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 cups chocolate chips semisweet, milk, dark or a mix
  • 2 cups flaked coconut

  1. Preheat the oven to 350° F.
  2. In a stand mixer (or with a hand mixer in a large bowl), cream butter and both sugars. Add eggs and beat until fluffy.
  3. Add flour, baking soda, baking powder, salt, and vanilla, and mix until incorporated.
  4. Fold in chocolate chips and coconut. Use a medium cookie scoop to scoop dough, roll it into balls and place them onto a lightly greased baking sheet.
  5. If desired, add more chips to each ball and roll in coconut to get some more on top before baking.
  6. Bake for 10-12 minutes.
  7. Let cookies sit on the cookie sheet for a few minutes, then remove them to a rack to cool.
