Coconut Coated No Bake Energy Bites

Made with a few simple ingredients, this prune ball recipe is a delicious and easy sweet snack that's perfect for on the go. Made with prunes, almonds, chia seeds, and orange juice, they make a quick and healthy snack that will keep you energized for the day's adventures.

Ingredients

  • ½ cup almonds 90 g
  • 1 cup packed prunes 250 g
  • 1 Tbsp chia seeds 12 g
  • pinch of salt
  • ¼ tsp vanilla extract
  • 2 Tbsp orange juice or water 30 mL
  • ½ cup unsweetened shredded coconut 45 g

Instructions

  1. Blitz: In a food processor, process almonds until coarsely ground. Add all remaining ingredients except coconut and process until the mixture is evenly mixed.
  2. Roll: Form teaspoon sized pieces of dough into balls and roll in the shredded coconut to coat.

Notes

  • Store in an air tight container in the fridge for up to a week.
  • For sweeter bites, use sweetened shredded coconut.
