Coconut Cookies with Vanilla & Lime

Ingredients

  • 125 g butter room temperature, soft
  • 90 g brown sugar or can be replaced with another sweetener
  • 2 egg
  • 1 tsp vanilla
  • lime rind grated, 2 or 3
  • 200 g all-purpose flour
  • 50 g coconut flakes
  • 1 pinch salt

Instructions

  1. Mix all the ingredients (it doesn’t have to be perfect) and form balls of about 20g (about 1 oz), then flattened them and put on a tray lined with baking paper.
  2. The dough doesn't need to be perfect, it's the imperfections that give these cookies their homemade charm. Form the dough into balls and flatten them slightly before placing them on a baking tray lined with parchment paper.
  3. Place the tray in a preheated oven at 170 °C (338 °F) with fan on, for 12-14 minutes. When they’re done, they’ll be lightly golden on the edges and just set in the middle.
  4. Enjoy them with your morning coffee!
