Ingredients
- 125 g butter room temperature, soft
- 90 g brown sugar or can be replaced with another sweetener
- 2 egg
- 1 tsp vanilla
- lime rind grated, 2 or 3
- 200 g all-purpose flour
- 50 g coconut flakes
- 1 pinch salt
Instructions
- Mix all the ingredients (it doesn’t have to be perfect) and form balls of about 20g (about 1 oz), then flattened them and put on a tray lined with baking paper.
- The dough doesn't need to be perfect, it's the imperfections that give these cookies their homemade charm. Form the dough into balls and flatten them slightly before placing them on a baking tray lined with parchment paper.
- Place the tray in a preheated oven at 170 °C (338 °F) with fan on, for 12-14 minutes. When they’re done, they’ll be lightly golden on the edges and just set in the middle.
