Coconut Date Balls are bite-sized energy snacks made by blending softened Medjool dates with chopped pecans until they form a sticky dough, then rolling into balls coated with desiccated coconut. These no-bake treats deliver a chewy texture from the dates combined with a nutty crunch from the pecans. A pinch of sea salt balances the sweetness and enhances the flavors. Ingredients

  • 10-12 Medjool dates
  • 2 cups pecans chopped
  • Pinch salt sea salt
  • ¼ cup desiccated coconut

Instructions

  1. Pit the medjool dates and soak them in warm water for 10 minutes until they soften
  2. Place the pitted dates and pecans in the bowl of a large food processor. Blend on high until a thick “dough” is formed and the mixture feels sticky.
  3. Scoop about 1-2 tablespoons of the mixture and use your hands to roll it into a ball. If you have time you can let them set in the fridge for 5 minutes.
  4. Roll the energy bites into desiccated or shredded coconut pressing gently so they adhere. Makes about 12-14 bites.

Notes

  • Store leftovers in an airtight container in the refrigerator; they keep for 10 to 14 days.
  • To freeze, roll the balls and place on a baking sheet until solid, then transfer to a freezer-safe bag; thaw overnight in the fridge before eating.
  • Feel free to customize the nuts or coconut coating to suit your taste preferences.
