Coconut Flour Mug Cake

A simple, single-serving dessert made with coconut flour, this banana coconut flour mug cake is grain-free and the perfect treat to satisfy a sweet craving.

Ingredients

  • 2 Tablespoons coconut flour
  • 1 Tablespoon maple syrup
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon sea salt
  • 1/2 banana mashed
  • 3 Tablespoons egg whites whisked (or 1 egg)
  • 1/2 Tablespoon melted coconut oil
  • 1 Tablespoon almond milk
  • 1/4 teaspoon vanilla
  • 1 Tablespoon chocolate chips

Instructions

  1. Mix ingredients: In large mug, mix together coconut flour, maple syrup, baking powder, sea salt, banana, egg, coconut oil, almond milk, mashed banana and vanilla. Stir in chocolate chips.
  2. Cook: Place in microwave and heat on normal setting for 2 minutes. Check to see if it's still doughy in the center, if so heat for another minute until mug cake is cooked through. Let cool for 2-3 minutes, then enjoy.
