Coconut Lime Popsicles

These cool and refreshing tropical Coconut Lime Popsicles are creamy, zesty with just the right amount of sweetness.

Ingredients

  • 14 ounce can unsweetened coconut milk
  • ⅓ cup allulose or ¼ cup of monk fruit
  • ¼ cup unsweetened shredded coconut
  • ¼ cup fresh lime juice
  • 2 teaspoons lime zest
  • Pinch of salt

Instructions

  1. Add the coconut milk, allulose, shredded coconut, lime juice, lime zest and salt in the bowl of a food processor.
  2. Blend until the shredded coconut is broken down and the ingredients are well combined.
  3. Pour the mixture into 6 popsicle molds.
  4. Cover and place the popsicle sticks in, then freeze for at least 4 hours or overnight before serving.

Notes

  • I used allulose in this recipe because it helps prevent the popsicles from freezing rock hard.  If you can't find allulose, you can use ¼ of monk fruit, since it's a little sweeter than allulose.  I would only use (also ¼ cup) Swerve or other erythritol based sweetener if you have no other options.
