Coconut Macaroons

Coconut Macaroons are made by blending sweetened condensed milk, shredded coconut, vanilla, and almond extracts then baking dollops until lightly browned at the edges. This simple sweet treat offers chewy centers with a crisp exterior. Variations include using nuts instead of coconut or adding chocolate chips for a different texture and flavor.

Ingredients

  • 7 ounces sweetened condensed milk
  • 8 ounces sweetened coconut flakes
  • 1 teaspoon vanilla extract
  • 3/4 teaspoon almond extract

Instructions

    Cup of Yum
  1. Preheat oven to 350°F.
  2. Blend all of the ingredients together and drop by the teaspoonful onto a greased cookie sheet.
  3. Bake until the edges are lightly brown, about 8 to 10 minutes.

Notes

  • For nut macaroons, substitute 1 cup nuts in place of shredded coconut and bake for approximately 10 to 12 minutes.
  • To make chocolate chip macaroons, replace half a cup of coconut with mini chocolate chips before baking.
