Coconut Macaroons Recipe

This easy Coconut Macaroons Recipe is perfectly soft and chewy on the inside while crisp and toasty on the outside. Chocolate and/or powdered sugar are optional.

Ingredients

  • 14 oz sweetened shredded coconut two 7 oz. bags
  • 14 oz sweetened condensed milk 1 can
  • 1 teaspoon vanilla extract
  • 2 large egg whites at room temperature
  • 1/4 teaspoon salt
  • powdered sugar for dusting, optional

  1. Preheat oven to 350 degrees. Line two light-colored baking sheets with parchment paper and set aside.
  2. In a large bowl, combine coconut, sweetened condensed milk, and vanilla. Set aside.
  3. In a separate bowl, whip egg whites and salt until medium-firm peaks form. Fold egg whites into the coconut mixture until incorporated well.
  4. Drop by the spoonful onto prepared baking sheets. (I used a tablespoon-size cookie scoop). Bake 20-25 minutes or until bottoms and tops are golden brown.
  5. Dust with powdered sugar for a festive look (optional).
  6. Cool completely and store in airtight containers for up to 3 days.
